COMMON METHOD OF COOKING FOODS

Roasting

This is a method of cooking food in dry heat by any of the following: an open fire or overheated charcoal e.g. roasted maize, plantain, fish, yam, etc. In roasted sand or ash e.g. roasted yam, groundnut. It is a method of cooking by heating to extract water from the food.

Advantages:

  • Roasting develop good flavour in the food
  • Roasting in open fire is an open and feet method of cooking

Disadvantages:

  • Food tends to shrink during roasting
  • It requires constant attention

 

Grilling

Advantages:

  • It is a method of cooking food over, under or in front of a smokeless fire e.g. slice of meat, chicken parts, fish and plantain
  • It is a quick method of cooking
  • Grilled food digests easily

Disadvantages

  • It requires careful and constant attention
